Johann, I have already booked for Tech Ed and I have looked up the deep-dive on running Exchange 2007 SP1 on Hyper-V that you refer to but I can't see it anywhere, is it on the Tech Ed site or his it a separate deep dive?

It's not on the actual Tech.Ed site yet, but it should hopefully be online in the next week or so for voting/feedback/etc.

However in the meantime you can see a draft preview at http://blogs.technet.com/jkruse/archive/2008/06/26/update-on-unified-comms-mobility-track-australia.aspx

These sessions aren't 100% final and may change slightly, but this should give you a fair idea of the content.
