First it depends if you are running SBS 2003 or SBS 2008. If it is 2003, then chances are you have hardware that won't support 64 bit and 8GB of RAM, which in that case you would migrate to a new server with new hardware. If you are running SBS 2008 and it is not running as a VM, you would need to first convert the existing installed OS to a Virtual Machine. Once done, you can reformat the server and setup the converted Virtual Machine on top of the Hyper-Visor. Then you can create a second Virtual Machine running SBS 2011 and perform a migration. Once complete you can remove the old SBS 2008 Virtual Machine. One of the main reasons you can't do an inplace upgrade is Exchange does not support or allow this. You also can do a swing migration which would require a 3rd server (can be Virtual as well). A website that is well supported on this is at http://www.sbsmigration.com/ which is run by Jeff Middleton, SBS - MVP. If you have more questions on this you can visit my blog and send me a message blog.korteksolutions.com

The migration materials reference the source server and destination server, but what happens when an office wants to simply "upgrade" an existing server machine? I have seen a few web pages refer to using a virtual machine, but I'm not sure on how to go about doing that, and there doesn't seem to be much guidance to go that route.

Honestly, "Run compatible business software and applications" is a feature?

Updated versions of SharePoint and Exchange are good, but other than a rename of RWW and (the welcome) migration enhancement to the installer, there doesn't seem to be much.

I only have one or two clients left on SBS 2003. It's pretty unlikely I can get my SBS 2008 customers to upgrade!
