(1) You put somewhere in the word document the field "RevNum" and associate it with a bookmark, e.g. "RevCounter". You can hide that field or print it in white, if you don't want it to appear on a printout or on the screen.

(2) If you want to display your intial version with "1", when the RevNum has advanced to 5, you type somewhere a "4" and define that as another bookmark (e.g. "Offset"), which you may want to hide as well.

(3) For displaying the wanted "version 1", you use a Field with the Formula "{RevCounter - Offset}".

(4) If again your versioning advances faster than you want, you just change the number you typed at the offset bookmark.

Or you could just use something like www.wordprops.com and edit all the metadata of the codocument. Worked for me like a charm, both in old .doc and new .docx files
